Back in 2019, our founders Chef Leo and Jamal were fed up with rubbery, soggy, oily fast-food fried chicken. They rented a tiny test kitchen and spent 14 months testing flour ratios, buttermilk marinades, oil smoke points, and spice chemistry.

On test batch #343, magic happened: a shatteringly crisp outer crust that sealed in boiling aromatic juices, remaining remarkably crunchy even 40 minutes after frying. Chickoz was born.
